Cod Liver is full of Vitamin A and D. and before you think yuck give it a try. A few months back I was watching Masterchef and each contestant was given a box with Russian ingredients. There was a verity of things in it and one of them was Cod Liver. Even the chefs did not know how to eat it. We were eating this as long as I can remember. This is one of my favorite ways to enjoy it. It’s almost like a delicacy. A little bit is all you need. you can also top it on your stuffed eggs. But my carb loving self loves Crostini.
- French Bread
- Cod Liver Canned
- Hardboiled Eggs
- Black Pepper
- Tomato (optional)
- Slice up bread and lightly toast
- Spread butter lightly on one side of the toast and sprinkle with black pepper.
- Top with Half sliced cucumber, thin slice of egg, a nice small slice of Cod Liver and Tomato if you are using it.
- sprinkle lightly with salt
- top with a small sprig of dill.
one long french baguette will make about 14 canapes
When eating low carb it does not involve potatoes. Eating healthier would be so much easier. But unfortunately carbs are not your friend! last year I had way too many zucchini in my garden and running out of Ideas I decided to make some Zucchini hashborwns. If you peel them your kids won’t notice that they are eating zucchini. I make this often now and I actually enjoy it very much.
2-3 large Zucchini
1 small onion
salt and pepper
2 tbsp olive oil
Wash and grate zucchini on the largest grater, sprinkle with salt and let it sit for a few minutes. Using your hands or cheese cloth squeeze as much water and you possibly can. You will have a lot less zucchini to work with.
Heat olive oil and add diced onion saute 4-5 minutes. Add Zucchini and fry for 7-8 minutes more
to have a nice crispy hash do not turn it over let it fry one side flip it over and repeat with other side.
Serve with Eggs.
Cabbage is one of the go to vegetables for me. You can cook such a varaity and this is one of them. they bacon infuses its flavor into cabbage with a bit of salt you have a perfect combination.
1 head of cabbage
8 slices bacon
Pre heat oven to 350
Remove outer layers of leaves from cabbage and slice in half. Sprinkle salt, Thyme, pepper and add sliced bacon on each side of bacon.
Wrap each half in foil and bake at 350 for one hour or until done. Check if done by poking cabbage with knife if it goes through easily then its done.
* You an also bake both halves wrapped together but the cooking time will be one hour and thirty minutes.
I wanted to make these for quite some time, but when I had bacon I forget about it and so I made them today for Valentines day for Hubby. I was thinking what to get him and I just do not know what. He has everything he needs. Last night I told him I will make a surprise for him he said that he is scared of my surprises. Because I got him a designer diaper bag for Christmas. I thought it was a useful gift he thought it was very funny. So this time I made him some roses. Because buying real ones not sure if he would like that. Here is how to make them so easy and it takes about 30 min total.
You Will Need
12 strips bacon
baking sheet with raised edge
fake flower stems
preheat oven to 375 and line baking sheet with foil.
start with one end of the bacon slice and form it into a small ball. Then twist bacon and wrap around the ball keep coiling and twisting the bacon. Secure with two tooth picks. repeat until you use up all bacon.
lay them out on cooling rack. Place cooling rack on baking sheet and bake for 15-20 minutes until bacon is crisp. cool roses so you can handle them.
remove flowers from stems and replace with bacon flower ( remove toothpicks)
And now you have a perfect man flowers. with just the right aroma
Enjoying the last of this great weather. So I still want to eat light. The seasoning is still summery. Try it by it self or as dip. Sashimi lovers will enjoy this. I did marinate my fish in salt and sugar.
8 oz Finally diced red salmon
1 finally diced fresh pickle
1/4 of a avocado pitted and finally diced
3 teaspoons soy sauce
1/2 teaspoon sugar
1/2 teaspoon minced red jalapeno
1/2 teaspoon toasted sesame seeds
2 teaspoons sesame oil
1/2 teaspoon cilantro
1/2 garlic glove pressed
3/4 teaspoon ginger
1 teaspoon lime juice
To Marinate Fish
8 oz salmon
2 teaspoons sugar
1 teaspoon salt
Let sit over night, rinse and use.
Dice salmon, pickle, and avocado.
To make sauce; mix soy sauce, sugar, jalapeno, sesame oil, sesame seeds, cilantro, garlic, lime juice and ginger. Mix until sugar is dissolved
Israeli Couscous is small ball shaped pasta. I like to make mine with mushrooms because I am a fan of mushrooms. Goes great with chicken or fish. Couscous is served hot.
1 Cup Couscous
2 Cup chicken or vegetable stock
1 cup diced mushrooms
1/4 cup diced red onion
1 small carrot
1/4 cup chopped celery
2 Cloves minced garlic
1/2 teaspoon salt
pinch of black pepper
2 tablespoons butter
Heat pan add couscous and butter, onion, garlic, mushrooms and carrots and toast 8-9 minutes or until couscous is turning golden brown.
Add stock and salt and pepper and stir well cover and steam couscous 20 minutes fluff and serve

Whenever I make egg rolls I usually make a large batch about 40 at a time and freeze them, I deep fry them when I need some. Otherwise to make a few it’s just to much work. This recipe is pretty easy and full of flavor.
40 Egg Roll Wrappers
1/2 Head thinly sliced cabbage
1 large carrot grated
4-5 large white mushrooms grated
1/2 medium onion grated
2 celery sticks grated
1 green pepper grated
2 large chicken breasts sliced into thin strips
4 tablespoons garlic powder
3 tablespoons oyster sauce
1 tablespoon sugar
1 teaspoon sesame oil
3 tablespoons oil
1/4 cup kikkoman soy sauce

Start by sauteing cabbage with 1 tablespoon of soy sauce, until wilted, then peppers onions and 1 tablespoon of soy sauce, 3-4 minutes, do the same to carrots and celery, mushrooms and peppers saute each group of vegetables in a few teaspoons of oil and put in large mixing bowl.
Stir fry chicken with 1 tablespoon of soy sauce and mix in with vegetables in the mixing bowl.
Add garlic powder,oyster sauce, sugar sesame oil and ginger. Mix all ingredients very well.
Lay egg roll skin out on the table and fill with one tablespoon of filling cover with one corner, then bring in one side roll, bring in the other side and roll until the whole skin is used up. it should look like a rolled envelope. Enjoy with Chili Sauce. Make 40 Mini Egg rolls.
