Cod Liver Crostini / Canape

Cod Liver is full of  Vitamin A and D. and before you think yuck give it a try.  A few months back I was watching Masterchef and each contestant was given a box with Russian ingredients. There was a verity of things in it and one of them was Cod Liver. Even the chefs did not know how to eat it. We were eating this as long as I can remember. This is one of my favorite ways to enjoy it. It’s almost like a delicacy. A little bit is all you need. you can also top it on your stuffed eggs. But my carb loving self loves Crostini.

 

Ingredients

 

  • French Bread
  • Cod Liver Canned
  • Butter
  • Cucumber
  • Hardboiled Eggs
  • Dill
  • Black Pepper
  • Salt
  • Tomato (optional)

To Prepare

  • Slice up bread and lightly toast
  •  Spread butter lightly on one side of the toast and sprinkle with black pepper.
  • Top with Half sliced cucumber, thin slice of egg, a nice small slice of Cod Liver and Tomato if you are using it.
  • sprinkle lightly with salt
  • top with a small sprig of dill.

one long french baguette will make about 14 canapes

Vietnamese Sandwich (Beef Bánh Mì)

I am far from being Vietnamese but I do enjoy food from that part of the continent. The first time I was introduced to this sandwich was by my hubby and I fell in love right away. But since the closest restaurant that we go and get them is about one hour away I make them at home that fixes my craving until the next time I get one that is authentic. please enjoy.

 

 

Ingredients

6 Crusty French Rolls

24 slices cucumber

24 slices Jalapeno

Cilantro

1/2 cup Mayo

1 large thinly julliened carrot

1 large daikon Julliened

2 tbsp granulated sugar

1/4 cup rice vinegar

1 lb beef steak (flank)

6 oz Mongolian marinade

or Tariyaki Marinade

 

To Prepare;

Combine Carrots, Diakon in bowl and mix with vinegar and sugar let marinate.

thinly slice steak and marinate in Mongolian sauce about 45 min. After meat is done marinating I used a cooling rack to broil in my oven until chard if you put it on pan meat will steam in juice.

Start by assembling your sandwich by slicing bread and coating with mayo, add cucumber slices, Jalapeno, meat, carrots and cilantro.

It really does take the craving away.

Salmon Cucumber Tea Sandwhich

Tea sandwiches are the best they go great if you have company over for tea or as a side dish. This is not a recipe just something I put together on German sunflower seed bread, which by the way is so good.

What you will need is
Cured salmon or lox. a smudge of mayonnaise, a dab of spicy mustard, German Sunflower bread, dill and cucumber. assemble and enjoy with a cup of tea.

Green Jalapeno Pepper Jelly

I am a fan of Jalapenos I like them raw, I like them pickled, canned, in my soup, in my sandwich and even Jelly. I hope that you will love it too.

Ingredients

5 Lb Bourbon Apples
12 Jalapenos some seeds removed
3 Cups of water
3 Cups apple cider vinegar
5 Cups Sugar

To Prepare;

Cut apples with core into chunks, slice jalapenos into halves and remove some seeds, since the seeds will make the jelly to hot.
Use a food processor or blender to blend the apple and jalapenos into a chunky puree.
Combine all the ingredients in a large pot and bring to a simmer. Simmer for 45-50 minutes.

Spoon mash into cheese cloth, hang over a large bowl and leave to strain for several hours. Do not squeeze or your jelly will be cloudy.

Bring jalapeno juice to a boil and let it simmer for 2-3 hours, or until the color turns auburn. skim off the surface scum.

Jelly is ready when pushed with finger on plate it scrunches and does not run. Or put a tablespoon into freezer and see if it holds shape, If not simmer a bit longer.
