Bang Bang Chicken

If you look through Google, you will find millions of recipes for Bang Bang chicken. But how my recipe is different? I used crispy fried chicken, I thought I was purchasing chicken nuggets for my daughter and by accident bought these little pieces of raw breaded chicken, so now I try to find recipes on how to use it up. You can use just regular boiled chicken breasts and you should have a very tasty meal.

Ingredients
3 Cups cut up chicken (I used breaded raw)
2 tablespoons peanut butter
3 tablespoons low sodium soy sauce
3 tablespoons sweet chili sauce
1 tablespoon rice vinegar
3 green onions

Will Need Deep Fryer ( I love it have the exact one)
Cuisinart Compact Deep Fryer (Google Affiliate Ad)

To make sauce, Mix peanut butter, soy sauce,sweet chili sauce, vinegar and onions set aside.

Crab Salad with Fresh Peas

Even if this is imitation crab, still makes a good salad. I love the peas in this salad it gives a bit of a different flavor, plus the dill reminds me of summer

Ingredients
16 oz crab diced
1 cup frozen peas
3/4 cup mayonnaise
1 tablespoon chopped dill
1/4 teaspoon black pepper

Will need Mixing bowl

To prepare;
Dice Crab into chunks. Add peas (don’t thaw them) mayonnaise, dill and pepper. Mix very well and serve.

Kung Pao Chicken

Kung Pao chicken, A nutty dish that is good to prepare for your self or for a large group. Serve over plain white rice.

Ingridents
1 Chicken breast
2 celery stocks
2 bell peppers
2 Garlic cloves
1 Thai Chili
2 tablespoon oil
1/2 cup raw peanuts

Sauce
3 Tablespoons low sodium soy sauce
1 teaspoon rice vinegar
2 tablespoons hoisin sauce
1 tablespoon corn starch
1 teaspoon sugar
1/4 cup chicken stock or water
1/2 inch grated ginger
1/2 teaspoon chili oil

To make sauce;
Mix all sauce ingredients

Will need Wok
16″ Japanese Wok – Fry Pans (Google Affiliate Ad)

To Prepare;
Cut up chicken into small chunks, Cut up celery and pepper into small 1/2 inch chunks. Heat wok. Add 2 tablespoons of oil into wok add peanuts and stir fry for 4 minutes or until golden brown. Add chicken and stir fry additional 4 minutes add vegetables, chili, and garlic and stir fry another 4-5 minutes or until vegetables are tender. Add sauce, Bring to a boil stir fry another 3-4 minutes. Serve over rice.
Makes 3-4 servings

Potato Latkes

Just another great way to enjoy potatoes.. You can use any potato that you like, but works best with russet potatoes. Kid love them and I have to find one that does not.

Ingriedeints
4 large potatoes
1 teaspoon salt
2 eggs
3 tablespoons flour
a pinch of pepper
Oil for frying
To prepare;
Grate potatoes, mix in flour, eggs, salt and pepper. Heat skillet on medium high heat with oil, ladle 2-3 tablespoon of potato mixture and fry 3 minutes per side or until nice and golden brown. Flip and fry the second side. Serve hot with sour cream.
Makes 12-15 latkes

Beef Broth with Home Made Noodles

Homemade noodle over light beef broth. Using all the ingredients that probably have in your pantry. Such a light dish, but yet filling.

10 oz beef chuck
6 cups water
1 1 medium onion
1 red pepper
2 medium potatoes
1 medium carrot
3 garlic gloves
1/2 teaspoon ground coriander
1/2 teaspoon Cumin
1 bay leaf
2 tablespoon salt
1/4 cup olive oil
4 green onions

Ingredients for Noodles

2 Cups flour
1 egg
1 egg yolk
1/2 teaspoon salt
1/2 cup warm  water
1 tablespoon olive oil

To Prepare;
To make noodles, mix flour, oil, egg, egg yolk, salt and water. Mix and then knead for 10 minutes until dough stop sticking to your hands, adding more flour if needed. Shape into a ball and let rest 45 to hour. Roll out into thin layer, flour well and fold over and over. Cut using a pizza cutter, unfold strips.

To Prepare Broth
Slice beef into small thin strips, Julianne carrots, half onion, peppers, and potato. Heat skillet to medium heat. Fry beef 5-6 minutes or until it has some browned pieces. Put into pan add water, garlic, bay leaf, coriander, cumin, salt and half onion. Simmer for one hour. Heat skillet add 1 tablespoon olive oil and saute potatoes for five minutes and transfer to the pot with stock, do same to carrots, peppers and onions
let Broth simmer for additional 20 minutes or until vegetables are done.

Bring a large pot of salted water to a boil adding 2-3 tablespoons oil, add noodles, when water starts to boil, let noodles boil for 45 seconds. Drain divide between plates, add broth  and vegetables on top top with black pepper, and green onions

Cheese Ravioli with Onion Sauce

The fall flavors of this dish are wonderful. It is a meatless dish but very filling. I came up with this recipe, wanting a sauce that was not tomato or cream.

Ingredients

30 Cheese Ravioli
1 large onion
8 large mushrooms
2 Garlic cloves
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon thyme
1 bay leaf
1 beef bullion cube
1 cup water
pinch of black pepper

To Prepare;

Dice onion into small pieces. Heat skillet on medium heat, add 2 tablespoon butter add onions, thyme, salt,pepper, bay leaf, and sugar saute on medium low heat for 20 minutes, stirring often.
Slice mushrooms. Heat another skillet to high heat add mushrooms and garlic. Stir fry for 6-8 minutes.
add to onions. Add beef bullion, flour and water mixing very well bring to a boil.
Serve over ravioli.
Makes three servings

To  Cook Ravioli
I used frozen filled with ricotta cheese and herbs
Bring salted water to a boil, Add ravioli bring to a boil. Boil for 4-5 Minutes or take one out and taste if done.

Salmon Cucumber Tea Sandwhich

Tea sandwiches are the best they go great if you have company over for tea or as a side dish. This is not a recipe just something I put together on German sunflower seed bread, which by the way is so good.

What you will need is
Cured salmon or lox. a smudge of mayonnaise, a dab of spicy mustard, German Sunflower bread, dill and cucumber. assemble and enjoy with a cup of tea.

Salmon Tartare

Enjoying the last of this great weather. So I still want to eat light. The seasoning is still summery. Try it by it self or as dip. Sashimi lovers will enjoy this. I did marinate my fish in salt and sugar.

Ingredients
8 oz Finally diced red salmon
1 finally diced fresh pickle
1/4 of a avocado pitted and finally diced
3 teaspoons soy sauce
1/2 teaspoon sugar
1/2 teaspoon minced red jalapeno
1/2 teaspoon toasted sesame seeds
2 teaspoons sesame oil
1/2 teaspoon cilantro
1/2 garlic glove pressed
3/4 teaspoon ginger
1 teaspoon lime juice
To Marinate Fish
8 oz salmon
2 teaspoons sugar
1 teaspoon salt
Let sit over night, rinse and use.
To prepare;
Dice salmon, pickle, and avocado.
To make sauce; mix soy sauce, sugar, jalapeno, sesame oil, sesame seeds, cilantro, garlic, lime juice and ginger. Mix until sugar is dissolved

Russian Tea Cakes

Russian tea cakes is the easiest cookie to make. I make mine with walnuts and butter that gives just enough crunch while still crumbly.

Ingredients
1 Cup softened butter
2 1/4 Cup flour
1/2 Cup powder sugar
1 teaspoon vanilla
1 3/4 cup walnut pieces
1//4 teaspoon salt

2 Cups powder sugar to roll cookies in

Preheat oven to 380
Mix butter, flour, powder sugar, vanilla, and salt mix until soft dough forms. Mix in walnuts. Form into one inch ball set on cookie sheet and bake for 12-13 minutes or just until starting to brown.
Roll Warm cookies in powdered sugar after they are cool roll them again.
makes 40 cookies.

Oliver Salad

Oliver salad is just full of goodness that is combined together and creates a great dish. It somewhat looks like a potato salad, but better.

Ingredients
1 boiled potato
1 boiled carrot
3 hard boiled eggs
1 Cup fresh peas
1 cup cubed ham
1/2 Cup diced dill pickles
3 Green onions
1 small pickle diced
1 cup mayonnaise
1/2 teaspoon black pepper
1/4 teaspoon salt

To Prepare;
Boil whole large potato and carrot for 45 minutes, boil eggs in separate pan until hard boiled. Dice potato, carrot,eggs, ham, dill pickles, and green onions into small pieces. Mix with Mayonnaise salt and black pepper
