Kombucha flavored Blueberry & Raspberry

I just recently started making Kombucha.  But I knew about it for at least 15 years. My mom used to make it all the time. Being a kid I could not bring myself to drink it because of the scoby.  So until recently I bought it at a grocery store which was pretty spendy for one 16 oz bottle. I got hold of a scoby and made myself some. Flavored with Raspberry and blueberry.  I prefer raspberry.  It’s so easy to make. it’s so good and a lot cheaper to make plus all the benefits. Tray to ask around and see if someone can give you a scoby otherwise you can make your own.

Ukrainian Sweet Jam Sandbars

I accidentally stumbled upon a recipe that I as going to make. Well while making it, the ingredients were so off that I just got a pile of goo. Trying to save it I added this and that baked it and it was so good that since that day I was asked for this recipe more then once.

 I was getting ready for a girls get together when I made these after I set them out my sister said that my mom used to make them and its called Vi-shi-van-ka except no almonds on top. I guess I have a bit of my mom in me. Or maybe just because im ukrainian.

ingredients

3 cups flour

1/2 tsp baking soda

2 sticks butter

1 large egg

1 cup sugar

1tbs Vanilla Extract

8 oz three berry jam

6 oz sliced almonds (optional)

 

To Prepare

Pre heat oven to 370.  Melt butter. Mix butter, sugar, salt, baking soda, vanilla extract and egg with a wire whisk until well combined. Add flour a cup at a time until well incorporated. Set aside 1/4 of the dough and leave it in freezer until needed.

In a 8×11 baking dish spread dough using your fingers evenly. Spread jam on top of dough. Take the dough that is in the freezer and breaking into small chunks sprinkle all over the top. Top with Almond.

Bake for 40 -45 minutes or just so the top is golden and underneath is consistency of sand. cool and cut into squares.

They taste so good the next day they will be chewy.

Bacon Roses (Man Flowers)

I wanted to make these for quite some time, but when I had bacon I forget about it and so I made them today for Valentines day for Hubby. I was thinking what to get him and I just do not know what. He has everything he needs. Last night I told him I will make a surprise for him he said that he is scared of my surprises. Because I got him a designer diaper bag for Christmas. I thought it was a useful gift he thought it was very funny. So this time I made him some roses. Because buying real ones not sure if he would like that. Here is how to make them so easy and it takes about 30 min total.

You Will Need

12 strips bacon

24 toothpicks

cooling rack

foil

baking sheet with raised edge

fake flower stems

To Prepare

preheat oven to 375 and line baking sheet with foil.

start with one end of the bacon slice and form it into a small ball. Then twist bacon and wrap around the ball keep coiling and twisting the bacon. Secure with two tooth picks. repeat until you use up all bacon.

lay them out on cooling rack. Place cooling rack on baking sheet and bake for 15-20 minutes until bacon is crisp. cool roses so you can handle them.

remove flowers from stems and replace with bacon flower ( remove toothpicks)

And now you have a perfect man flowers. with just the right aroma

Glazed Cherry Almond Twists

This is one of my favorite deserts to make and it’s always a hit. With very few ingredients you can make an excellent dessert.

Ingredients
1 can cherry pie filling
2 sheets Puff pastry dough
6 oz sliced almonds
5 tbs powdered sugar
1-2 tbs water

To Prepare

Heat oven to 420.

using thawed puff pastry unfold and cut into three sections where the folds were.

using a rolling-pin roll each section into about 14-16 inches long cut into thirds.

in the center of each rectangle add four cherries fold over and pinch together very firmly. Twist each long rectangle once and place on cookie sheet.

( I did not grease my cookie sheet because I used silicone liners if you don’t have one its one of the best things I ever bought.)

repeat and with all rectangles and bake once you have a full cookie sheet. bake for 15 minutes or until lightly browned and puffed. (if filling comes out gently push it back in with the back of a spoon and next time pinch more firmly.

Cool on cookie sheet

Glaze

mix powdered sugar with water mix well so its thick but runny, using a spoon drizzle all over twists and quickly sprinkle almonds on top

Chocolate Salami with Walnuts No Bake Dessert

I have been very busy with a second baby at home, its not that easy adjusting since my little Maya is four years old. Baby Ella was born in November and so I need quick desserts, that I can come up with when company comes over. We have this tradition that goes as far back as I can remember. When baby is born you have guest that come and chat and admire your child that was born, coming from a large family we have them often. I will post about that later. But anyway this is a very easy dessert that is very tasty. Enjoy. This is so easy to make that little hands can help make it.

Ingredients

2 1/2 cups Animal / Vanilla Crackers

1 14 OZ condensed milk

2 sticks of butter (melted)

5 tbs coco powder

1 tbs Vanilla

1 cup walnuts

To Prepare

in a large bowl break up cookies into small pieces I used half animal crackers half vanilla wafer cookies. add Walnuts.

Mix condensed milk, butter, coco powder and Vanilla until well combined.

Pour into cracker mixture and mix until well combined. *Take wax paper or plastic wrap and coated it with coco powder and put half mixture onto wrap. form into a log and firmly wrap it. Tie ends securely and leave it in the fridge or freezer overnight. or until firm slice and serve.

I used Sushi Roller mat to help me shape it. I think its very useful to have one at home.

Homemade Cranberry Citrus Fruit Juice Kampot with Honey

With Cranberries in season right now, I make my own juice or Kampot. of course with all the benefits of drinking it without any extra ingredients I will take this over any Soda any day. Kampot is good hot, cold or warm and will go perfect with your Thanksgiving meal. And as you can tell the cute little Gingerbread village was made by my beautiful daughter!

Ingredients

2 gallons water

16 oz fresh cranberries

1 large orange peeled and sliced

2 large lemons peeled and sliced

1 apple

1 cup Honey or more

 

To Prepare

Fill large pot with water I use faucet water, add cranberries, sliced Orange, sliced lemon and sliced apple bring to a boil and let it simmer for 10 minutes. cover and let it cool sweeten with Honey or Organic sugar. If you will drink it hot let it simmer for 25 minutes instead of 10.

strain and enjoy.

Baked Swai Talapia Fish with Saffron Peppers and Carrots

With Thanksgiving week coming up I am trying to cook on a lighter side this week. This fish recipe is so easy to put together. Saffron can be substituted with Tumeric. Saffron is more for color but still has a bit of a taste. And is one great spice to use with fish.

 

 

Ingredients

6 SWAI or tilapia fish fillets large

2 tbsp coconut oil

1/2 small green pepper

1/4 red pepper

1/4 yellow pepper

1 carrot

1 small onion

3 garlic cloves

pinch of Saffron

1 bay leaf

sea salt to taste

black pepper

pinch of sugar

Flat leaf parsley for Garnish

 

 

To Prepare

Chop up peppers into small pieces, chop onion, and shred carrot. Heat pan on medium high heat add coconut oil or any oil you like.

Add Peppers, carrots, onion, minced garlic, Saffron, pepper, bay leaf, just a small pinch of sugar, saute about 5-7 minutes. Taste and add salt to your liking. remove bay leaf and toss

Cut up fish into four pieces and very lightly salt it.  I used 10 oz fish fillet.

Start by layering pepper mixture and fish cover and bake at 350 for 45 minutes. The last 10 minutes of baking remove foil and let it bake (to remove some of the moisture)

Peanut Butter Rice Krispy Christmas Wreaths Cookies No Bake

I made these cute Rice Krispies with my four-year old and she just loved them as much as making ginger bread houses. But she still insisted that they need to be pink.

Ingredients

4 tablespoons butter or margarine

4 cup Miniature Marshmallows

1/2 Cup Peanut butter

6 cups RiceKrispies Cereal

4 drops of Green Food Coloring

small red candy for decorations (red-hot dots)

 

To Prepare

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter until melted add food coloring.

2. Add cereal. Stir until well coated. butter up your hands, working quickly shape into circles about 3/4 cup of mixture and Dot with red candy.

Vietnamese Sandwich (Beef Bánh Mì)

I am far from being Vietnamese but I do enjoy food from that part of the continent. The first time I was introduced to this sandwich was by my hubby and I fell in love right away. But since the closest restaurant that we go and get them is about one hour away I make them at home that fixes my craving until the next time I get one that is authentic. please enjoy.

 

 

Ingredients

6 Crusty French Rolls

24 slices cucumber

24 slices Jalapeno

Cilantro

1/2 cup Mayo

1 large thinly julliened carrot

1 large daikon Julliened

2 tbsp granulated sugar

1/4 cup rice vinegar

1 lb beef steak (flank)

6 oz Mongolian marinade

or Tariyaki Marinade

 

To Prepare;

Combine Carrots, Diakon in bowl and mix with vinegar and sugar let marinate.

thinly slice steak and marinate in Mongolian sauce about 45 min. After meat is done marinating I used a cooling rack to broil in my oven until chard if you put it on pan meat will steam in juice.

Start by assembling your sandwich by slicing bread and coating with mayo, add cucumber slices, Jalapeno, meat, carrots and cilantro.

It really does take the craving away.

Seared Tuna on Crispy Tortilla with Cilantro Sauce

This is one of our favourite appetizers. We love fish Tuna, Salmon, Swai, Cod any they are all good. My husband request this appetizer every time that I purchase Tuna. Easy to put together and so much flavor.

 

 

 

ingredients

8 oz Tuna steak

2 tbsp sesame seeds

pan spray or 1 tbsp oil

5 six-inch tortilla

1/2 avocado

1 cup shredded cabbage

1 small jalapeno

1/4 cup cilantro

1/2 lime

3/4 cup mayo

1/2 tsp sugar

sirachacha Sauce optional

 

To Prepare

Salt tuna steak and sprinkle with sesame seeds on all sides. Sear about 20 seconds per side and remove promptly from heat. let it rest on cutting board.

While tuna is resting make sauce. in small food processor combine cilantro, lime juice, lime zest of half lime, mayo and sugar blend until well blended. if too thick add a bit of water.

Slice tortillas in half and toast both side brushed with oil or broil. watching not to burn. Lay them out on pretty platter.

Top each half of tortilla with cabbage, thinly sliced Jalapeno, Sliced avocado and thinly sliced Tuna. Top with sauce and dot with Sirachacha sauce for extra heat.
