Russian Tea Cakes
Russian tea cakes is the easiest cookie to make. I make mine with walnuts and butter that gives just enough crunch while still crumbly.
Ingredients
1 Cup softened butter
2 1/4 Cup flour
1/2 Cup powder sugar
1 teaspoon vanilla
1 3/4 cup walnut pieces
1//4 teaspoon salt
2 Cups powder sugar to roll cookies in
Preheat oven to 380
Mix butter, flour, powder sugar, vanilla, and salt mix until soft dough forms. Mix in walnuts. Form into one inch ball set on cookie sheet and bake for 12-13 minutes or just until starting to brown.
Roll Warm cookies in powdered sugar after they are cool roll them again.
makes 40 cookies.
Oliver Salad
Oliver salad is just full of goodness that is combined together and creates a great dish. It somewhat looks like a potato salad, but better.

Ingredients
1 boiled potato
1 boiled carrot
3 hard boiled eggs
1 Cup fresh peas
1 cup cubed ham
1/2 Cup diced dill pickles
3 Green onions
1 small pickle diced
1 cup mayonnaise
1/2 teaspoon black pepper
1/4 teaspoon salt
To Prepare;
Boil whole large potato and carrot for 45 minutes, boil eggs in separate pan until hard boiled. Dice potato, carrot,eggs, ham, dill pickles, and green onions into small pieces. Mix with Mayonnaise salt and black pepper




Rice Pork Pilaf- Plov
Plov is usually made outside in a large pot, using lamb. I made mine with pork. But is also good with beef, chicken or any meat you have. This is a whole meal in its self.
Ingredients
1 1/4 Cup Jasmine rice
10 oz Meat (pork)
1 1/4 cup chopped onion
\/1 1/4 cup chopped carrot
3 Cloves Garlic
1 1/2 teaspoons salt
1/4 Cup olive oil
1 tablespoon butter
1 teaspoon fennel seeds
3 oz raisins
Will need a large skillet

To Prepare;
Chop onions into bite size pieces, julienne carrots,slice garlic into fourths and cut meat into bite size pieces. Fill Large skillet with oil and butter, add meat and saute 10-15 minutes. Add onions,garlic and saute another 5 minutes. Add carrots raisins, fennel seed and sautes additional 5 minutes. add rice and stir fry another 5-6 minutes. Add three cups of water and bring to a simmer, Close lid, turn on low and let all rice absorbs water about 25-30 minutes. stirring twice during the cooking process. Makes about seven cups. 








Chicken Pot Stickers
Pot Stickers are little dumplings filled the meat, cabbage, herbs and spices. This is my daughters favorite food. The dumpling fits right into her little hand and big enough to eat in three bites.
Ingredients
1 lb Ground Chicken
2 Cups grated cabbage
2 cloves garlic pressed
4 tablespoons green onion
1 inch grated ginger
1 tablespoon sesame oil
1/4 teaspoon grated red jalapeno
3 tablespoon soy sauce
2 tablespoons melted butter
30 Pot sticker wraps
Dipping Sauce
3 Tablespoons soy sauce
1 Tablespoon rice vinegar.
1 teaspoon brown sugar
1 teaspoon sesame oil
1 teaspoon chopped green onion
Mix and serve.
Will Need;

Mix all ingredients excluding pot sticker wraps. After everything is mixed, fill one pot sticker with about 1 tablespoons of filling or so they are full, it depends how big your wrapper is. Wet edges with water fold over and close.
Start up your steamer, put a little oil on the steamer and fill with dumpling. Steam 7 minutes or until done. In frying pan gently fry each side, just until dumping starts to take color.
serve with dipping sauce.
Dumplings can be frozen with not steamed.
Make 30 Dumplings. 







Cheesy Grits with Shrimp and Egg
This is the best comfort food that you will ever eat, Looking to make something that was both good and fancy enough to serve for guests in the morning instead of the usual eggs, sausage and hash browns. And I guess I hit the right notes. Since I got raves about it.
2 Cups instant grits
2 1/2 cups Milk
1 tablespoon butter
1 Cup white or yellow Cheddar
2 Slices bacon
1 garlic clove
1/4 cup beef stock
1 cup peeled raw shrimp
1 tablespoon green onions
2 tablespoons chopped tomatoes
2 eggs
salt and pepper
To Prepare;
Mix grits, milk and butter in a pan and bring to a boil. Turn down to simmer and simmer for 5-6 minutes mixing constantly so grits will not stick to pan. Add Cheese and keep on mixing until cheese is melted and grits are the consistency of cooked oatmeal.
Slice bacon into bite size pieces add to skillet, add garlic and saute for 3-4 minutes or until bacon is turning crispy add shrimp and beef stock. saute another 2 minutes.
Fry both eggs sunny side up
fill two bowls with grits, add shrimp topping on top and top with egg. Garnish with tomatoes and green onions.
will make two bowls. If serving in smaller portions will make 4 bowls but add 2 more eggs. 



Kampot – Fruit Juice
Because it is nearing 100 degrees here in MN and my lawn looks like Sahara dessert. Kampot is the drink to have. Kampot is a homemade fruit juice., using any fruit you have at home. Do you have a few handfuls of frozen berries in your fridge? if yes, you can make Kampot

Ingredients
16 Cups water
2 Cups blueberries
1 Cup raspberries
1 Cup strawberries
1 Cup Sugar
2 Tablespoons lemon juice
To prepare;
Mix water, berries, lemon juice and sugar to a boil, Turn down to a simmer and simmer 10-15 minutes, turn off cover and let sit 1 hour.
Strain Kampot, throw away solids. Store in Fridge.
Makes 16 Cups. Enjoy it cold. 
Baked Eggplant parmesan with Homemade Tomato Sauce
If you love lasagna, you will love the Eggplant bake. I baked my eggplant instead of frying it, Just to save on some fat. The results were the best, I served it by it self with a nice simple green salad. without the cheese you would have your self a vegan course.

Ingredients
2 Medium Eggplants
2 Eggs
2 Cups seasoned breadcrumbs
1/2 Parmesan cheese
2 cups shredded mozzarella cheese
Salt
1 teaspoon olive oil
Sauce
3 14 Oz Hunts Canned Diced tomatoes
2 Tablespoons Virgin Olive Oil
4 basil leaves
3 Cloves of Garlic
1 1/2 tablespoons sugar
To Prepare;
Preheat oven to 380 F.
Slice Eggplants into 1/8 inch slices, sprinkle salt on both sides and set aside for 20 minutes
Whisk eggs well, in a dish. Combine breadcrumbs and Parmesan cheese in another bowl.
Dip Eggplant slice into egg mixture then into breadcrumbs and place onto a large baking dish. Repeat until all Eggplant pieces are coated.
Bake Eggplant for seven minutes per side.
Sauce;
In Food Processor combine, Tomatoes,Olive Oil, Basil leaves,garlic and sugar blend until well blended and smooth. Transfer into pan and bring to a simmer. Simmer 5-10 minutes.
To Make dish
In Ceramic baking dish, great with 1 teaspoon olive oil, 1/4 cup of tomato sauce and eggplant slices until bottom is covered.
second layer, sauce, eggplant 1/2 cup cheese and so on until you use up eggplants, sauce and cheese leave 1/2 cup cheese. After dish has baked, add 1/2 cup cheese to the top uncover and bake additional 5 minutes. Bake at 370 for 45 minutes covered with foil.
makes 6-8 servings.
Crepes with Farmers Cheese
Crepes are so easy to make, just a few ingredients and you have a wonderful dessert. I use farmers cheese for the filling. But cream cheese can be substituted or any filling you like.
Ingredients
4 eggs
1 1/2 Cups Milk
2 Teaspoons sugar
1 teaspoon vanilla
1 Cup Flour
1/2 Cup Melted butter
To Prepare
In mixing bowl whisk eggs, milk, vanilla and sugar. Add flour whisk until mixture is smooth. Add melted butter and whisk well again.
In 8 inch skillet. Pour about three tablespoons of batter into the center of the skillet. Lift and turn pan to cover the bottom of the skillet. Cook until set. Lift slowly using a fork and flip to uncooked side and let it cook until turns very light brown.
Remove and set onto a plate.
Filling
2 1/2 Cups Farmers cheese
1 Large Egg yolk
1 teaspoon vanilla
5 tablespoons Sugar
Mix farmers cheese, egg yolk, vanilla and sugar until well combined spread 2 tablespoons onto a crepe and fold over and over. Fry lightly in butter 12 seconds per side and serve
Makes 15-16 crepes










Spring Rolls with Curried Shrimp
Spring rolls is such a light food, great for summer days. If you don’t like shrimp you can substitute grilled chicken.
Ingredients
1 Cup raw shrimp
1 teaspoon instant curry paste
1/2 teaspoon garlic powder
1 table spoon finally chopped cilantro
7 rice paper sheets
1 avocado
1 small cucumber
2 slices of tomato
Sweet chili sauce for dipping
To Prepare;
Mix shrimp, curry, garlic and cilantro and let marinate 30 min. Heat grill and grill shrimp just enough for them to turn pink and set aside.
slice avocado in half and slice each half into slices, Juline cucumbers and tomatoes. Fill a large bowl with very warm water and one at a time well the rice paper about 15 seconds. Remove from water and put three-four shrimps in a line, 3-4 pieces of avocado, one lettuce leaf, a few cucumber pieces, and 3 pieces of tomato. Roll into a roll tightly. Slice into three pieces and serve with sweet chili sauce.
Makes 7 serving
