Cheesy Grits with Shrimp and Egg

This is the best comfort food that you will ever eat, Looking to make something that was both good and fancy enough to serve for guests in the morning instead of the usual eggs, sausage and hash browns. And I guess I hit the right notes. Since I got raves about it.

Ingredients

2 Cups instant grits
2 1/2 cups Milk
1 tablespoon butter
1 Cup white or yellow Cheddar
2 Slices bacon
1 garlic clove
1/4 cup beef stock
1 cup peeled raw shrimp
1 tablespoon green onions
2 tablespoons chopped tomatoes
2 eggs
salt and pepper

To Prepare;
Mix grits, milk and butter in a pan and bring to a boil. Turn down to simmer and simmer for 5-6 minutes mixing constantly so grits will not stick to pan. Add Cheese and keep on mixing until cheese is melted and grits are the consistency of cooked oatmeal.

Slice bacon into bite size pieces add to skillet, add garlic and saute for 3-4 minutes or until bacon is turning crispy add shrimp and beef stock. saute another 2 minutes.
Fry both eggs sunny side up
fill two bowls with grits, add shrimp topping on top and top with egg. Garnish with tomatoes and green onions.

Crepes with Farmers Cheese

Crepes are so easy to make, just a few ingredients and you have a wonderful dessert. I use farmers cheese for the filling. But cream cheese can be substituted or any filling you like.

Ingredients
4 eggs
1 1/2 Cups Milk
2 Teaspoons sugar
1 teaspoon vanilla
1 Cup Flour
1/2 Cup Melted butter

To Prepare
In mixing bowl whisk eggs, milk, vanilla and sugar.  Add flour whisk until mixture is smooth. Add melted butter and whisk well again.
In 8 inch skillet. Pour about three tablespoons of batter into the center of the skillet. Lift and turn pan to cover the bottom of the skillet. Cook until set. Lift slowly using a fork and flip to uncooked side and let it cook until turns very light brown.
Remove and set onto a plate.

Filling
2 1/2 Cups Farmers cheese
1 Large Egg yolk
1 teaspoon vanilla
5 tablespoons Sugar

Mix farmers cheese, egg yolk, vanilla and sugar until well combined spread 2 tablespoons onto a crepe and fold over and over. Fry lightly in butter 12 seconds per side and serve
Makes 15-16 crepes

Buttermilk Biscuit filled with Sauerkraut (Piroshki)

Piroshki is a fast easy snack or lunch. My mom used to make these but she made the dough from scratch. I just use the buttermilk biscuit dough from the tube. These are perfect to child’s hands not too big and not too small.

Ingredients
1 tube of Pillsbury buttermilk biscuits The Pillsbury Cookbook By Pillsbury Company (Google Affiliate Ad)
1 cup shredded cabbage
1/2 cup sauerkraut
1 tablespoon shredded carrot
1/4 teaspoon fennel seeds
a pinch of pepper
1/4 teaspoon salt or to taste
1/2 Cup Oil

To Prepare;

Open biscuits and layout on table. Make filling by frying cabbage, sauerkraut,carrots, fennel seeds salt and pepper, saute on med low about 10 minutes.
Stretch  dough about as big as the inside of your palm, fill dough with 1 tablespoon of filling and pinch the opposite sides together.
Heat oil in frying pan med low and fry until golden brown or 1-2 min. per side.

Zucchini Pancakes

I grew some zucchini in my garden. This is a great way to use them up.

Ingredients

4 large zucchinis
2 eggs
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 Garlic clove pressed
1/2 Cup of Bisquick Mix
Oil for frying

To Prepare;

Grate Zucchini and press to remove some of the water. Add eggs, salt, pepper, Garlic, Bisquick mix. Mix well if to dry add 1 teaspoon of water at a time. Heat frying pan on medium add oil and fry two minutes per side. Enjoy with dill and sour cream.
Make 12 small pancakes
